In the summer, my refreshing dessert of choice is still doufuhua: cold silken tofu pudding with a bit of ginger syrup poured on top. The only time my grandma used the blender was to blitz roasted black sesame seeds into a sweet soup to go with tangyuan, little balls made of glutinous rice flour stuffed with more sesame. For her, the ideal dessert should be more than two bites.

Up next in the Tacos A Go Go ‘Taco Tuesday Team-Up’ program is chef Chris Williams of Lucille’s. Williams and Tacos A Go Go chef-owner Maribel Gomez have created the Holy Mole Taco ‘ featuring braised oxtail, sweet potato and cabbage slaw in a corn tortilla topped with oxtail gravy, available at all Tacos A Go Go locations on every Taco Tuesday throughout the month of March. A portion of proceeds from each taco sold will benefit Williams’ non-profit, Lucille’s 1913, which has donated more than 190,000 meals to people in need since the start of COVID-19.

Then it’s up to Northern Ireland, where the resurgence of the pine marten is having an unexpected benefit for the endangered red squirrel. Pine martens are preying on the invasive grey squirrel, which has driven the red squirrel to near-extinction, and this is helping to restore the natural balance. Mooney meets volunteers working to protect basking sharks, loggerhead turtles and (aww!) wild hamsters, and learns how European cities are providing havens for many species, including peregrine falcons, the common swift and vesper bats.

50 States, 50 Cuisines: The Food Worth Traveling For in Every State

Two years ago we set out to identify a signature dish for each state, from Sonoran dogs in Arizona to cheese curds in Wisconsin. For the second iteration of this list, we wanted to go beyond the classics’the food everyone tells you to try when you visit’and highlight chefs and cuisines that have had a distinct impact or reflect a noteworthy community in the state. We looked at all 50 states (plus Washington, D.C., and Puerto Rico) and their unique food histories, debating our choice for each on impassioned Zoom calls and lengthy Slack threads. The final result is a list of state-specific cuisines, each based on a longstanding diaspora (like Vietnamese food in Louisiana), an Indigenous community (Abenaki in Vermont), or something totally endemic (New Mexican in New Mexico). Our goal was to highlight a cuisine worth traveling to each state for, much of which you truly can’t get anywhere else. In some cases, it was so hard to choose that we included an honorable mention. At a time when much of the travel we’re doing is domestic and road-trip-based, it feels apt to celebrate America’s varied food cultures’and maybe even discover a little something about our home states along the way.
